Ingredients
  

Peanut Butter Layer
  • 1/2 cup natural unsweetened creamy peanut butter
  • 1 to 2 tablespoons low carb sweetener to taste
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
Chocolate Layer
  • 1/2 cup dark chocolate 85 percent or higher
  • or
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons coconut oil
  • Low-carb sweetener to taste
Optional Toppings
  • Flaky sea salt
  • Crushed peanuts
  • Unsweetened shredded coconut

Method
 

  1. In a bowl, stir together peanut butter, sweetener, vanilla, and salt until smooth.
  2. Spoon small portions into silicone molds or a lined mini muffin tin.
  3. Freeze for 10 minutes to firm up.
  4. Melt chocolate gently in the microwave at low power, stirring until smooth.
  5. Spoon chocolate over each peanut butter layer and tap to smooth the tops.
  6. Sprinkle with sea salt if desired.
  7. Freeze for another 15 minutes until fully set.
  8. Store chilled or frozen until ready to enjoy.

Notes

Use powdered sweetener for a smoother texture.
Store in the fridge for softer bites or the freezer for a firmer snap.
