  • 2 tsp Olive Oil
  • 2 tsp Garlic minced
  • 1/2 Cup onion diced
  • 8 Ounces pasta of choice
  • 2 Cup chicken broth
  • 1 Cup Cup milk
  • 1/2 Cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • Salt to taste
  • 1 Pinch Pepper
  • Fresh Parsley for Garnish

Method
 

  1. Warm the olive oil in a large pot. Add the diced chicken and cook until lightly golden. Season with salt and pepper.
  2. Add the minced garlic and diced onion. Cook until the onion softens and becomes fragrant.
  3. Add the pasta, chicken broth and milk. Stir well so all ingredients combine..
  4. Cover the pot and cook on medium heat stirring occasionally until the pasta becomes tender.
  5. Stir in the Parmesan cheese until creamy. Taste and adjust seasonings.
  6. Let the pasta rest for five minutes. Finish with fresh parsley and serve warm.

Notes

You can make this recipe even faster by using precooked chicken. Add a splash of milk or broth when reheating to keep the pasta creamy. Short pasta shapes like penne rotini or shells work best for even cooking.
